Carrot Chutney by Preethi Raju

Ingredients:

Grated carrot 1 cup
Grated cocunut 1/2 cup
Roasted peanuts 1 tbl.sp
Red chilles 10
Garlic 1 flake
Dhania 2 tsps
Salt as required
Oil for frying
Mustard seeds 1/4 sp

Method:

1. Fry red chilles and dhania in kadai with little oil and keep aside.
2. Heat oil in same kadai fry grated carrots till raw flavour is lost.
3. Allow it to cool and grind with fried ingridients,roasted peanuts,cocunut,salt,garlic to coarse paste.
4. Heat oil add mustard. when it splutters add chutney and mix well.
