Zucchini with Onion and Tomato   by Lalit Punwani     

Ingredients:

3 Medium Zucchini - diced
1 medium onion - diced fine
1 medium tomato - peeled and chopped
1 teaspoon Garlic paste
1 teaspoon Ginger paste
1/2 teaspoon salt
1/4 teaspoon turmeric
1/2 teaspoon chili powder
2 tablespoons olive oil

Method:

Put the oil in a medium sized pan and set over medium heat.

When hot, add the onions and fry until they are golden brown. Add the garlic paste and ginger paste. Stir and fry for a minute. Now put in the salt, turmeric, and chili powder. Stir it for a few seconds and add the tomatoes to the pan. Stir it for about a minute. Add the zucchini to the pan and stir to mix it nicely with the tomato and spice mixture.

Cover and cook on medium-low heat, stirring occasionally, for about five to ten minutes or until the zucchini is done.
