Dill Fried Rice by Maya

I am a student studying in US, my husband loves to experiment with good food, so i am learning to make good food. I am an artist who paint & dance.

Ingredients:

Dill (Sabbasige) - 2 Cups Onions - 1 cup
Corn -1 cup
Green Peas -1 cup
Green Chilles -6(depending on ur spice level)
Red Bell peppers -1 Cup
Olive Oil -8 tsp
Shahi Jeera - 1tsp
Cashews - 8-10
Garlic Paste -1tsp
Ginger -1 tsp
Mint leaves - 1tsp
Garam masala -1/2 tsp
Lemon Juice - 1tsp
Coriander leaves -2 tsp
Salt to taste
sugar to taste
Grated coconut- 1/2 cup
Cooked basmati rice - 6 cups


Method:

In a kadai heat olive oil add Shahi jeera, allow it splutter, add garlic paste, ginger paste, green chilles & cashews, when cashwes turn slightly golden brown add onions, red bell peppers & Dill. allow onions and bell peppers to turn golden brown fry till dill becomes soft. add mint leaves, salt and sugar. then add garam masala, corn and peas.when all the ingredients are mixed well it gives a good fragrance, add lemon juice and rice. Decorate with coriander leaves & grated coconut. serve hot.
